Bibb or Butter Lettuce
Fresh Mozzarella Cheese
Red Pepper Flakes
Champagne Vinaigrette or “Herbes de Provence Vinaigrette”
Arrange the Bibb Lettuce, Place sliced tomatoes on top, followed by sliced Mozzarella and Fresh Basil. Sprinkle the Red Pepper Flakes for added “kick,” and then drizzle the Champagne Vinaigrette over the Salad.
Course Two- “Isn’t it Romantic Fettuccine Carbonara”
2 Tablespoons Olive Oil
6 cloves- Garlic- chopped
1/2 lb- Bacon
3 Egg Yolks
1/2 cup Half and Half
3/4 cup Shredded Parmigiana Cheese
1/4 cup Shredded Romano Cheese
1 pound Asparagus Spears
Bring Pot of Water to rolling boil, and add Fettuccine. Make sure the water is salted so the pasta does not stick. Cook the bacon in garlic, drain and set aside but keep all of the garlic. In the meantime, bake the Asparagus with a teaspoon of Olive Oil and at least a clove of chopped garlic at 400 degrees for 10 minutes.. Whisk the eggs, half and half and cheeses. Drain the Pasta and bring back to the pot, and add the whisked ingredients. Mix well. Mix bacon into the pasta, and save some to top if off, along with the chopped Basil. Garnish with the roasted Asparagus. Pair with a lovely Red… Your Favorite Cabernet.
For a Vegan/Vegetarian Experience, substitute
- ¼cup all-purpose flour (gluten-free if preferred)
- 2 ½cups plant-based milk (such as soy or almond to whisk into the Pasta.
Dessert – “You Do Something To Me,” Cupcakes
Cupcakes are always Just the Right Size and always Fun to Bake. Using a Box Recipe is always easy and reliable, but it’s all in the ICING. This Chocolate Cupcake is covered in “Red Velvet,” Ice Cream, BUT creativity is the key to creating Your Favorite Cupcake.
If you like a Traditional Cupcake, again, a “Box” will do, but Get Creative with the Icing.
Chocolate Buttermilk Icing Recipe;
1 cup Salted Butter- ( 2 sticks) softened to room temperature.
4 cups – Powdered Sugar
1/2 cup- Cocoa Powder
1 tsp. – Vanilla Extract
3-5 tablespoons – Milk ( your preference of whole, lowfat, soy, almond)
Get the Electric Mixer and cream the butter. Add sugar one cup at a time until completely combined. Sir in Cocoa powder and then Vanilla Extract. ( scrape down the sides!) Add Milk, 1 tablespoon at a time. ( best at this point to mix at “medium high.”) Watch the icing at this point, as the less milk you add the stiffer the icing.
Get Fancy – Place the Icing in a Piping bag, or a “Felipa Trick,” is to place the icing and seal in a Quart Sized Storage Bag, Make sure it is sealed tight, and cup a triangle at the bottom corner and PRESTO… A piping bag! Again Get Creative and add Sprinkles and Happy Valentine’s Day!
